Mid-Week Meal Prep

Normally this one was supposed to be posted on a Friday (meal prep should happen in the weekend, no?), but between now and my upcoming competition, I really have to take my free time when I have it. This past weekend, we had a big family BBQ for my step daughter's birthday, and there was a LOT of leftover food. It didn't really make sense to make a meal prep until that was all gone. Today's video is one of my favorite and EASY meal prep dishes, a one-dish Mediterranean inspired Chicken Dish. (recipe below the video)


Mid-week Meal Prep - One Dish Chicken

250g Pasta

500ml Chicken Boullion

500g Chicken (cut into blocks)

50g Chorizo (cut in small blocks)

165g Cream Cheese

Med Onion (diced)

10g Baby Spinach (basically a handful or two)

100g Sun Dried Tomatoes (cut up into pieces)

200g Cherry Tomatoes (i quartered them, but halves will work too)

15g Parmesan (shredded and put on almost at the end of cooking)


Throw it all in one big baking dish, give it a stir or two, cover it with tin foil and toss it in the oven (185C/365F). I bake 40 minutes, then remove, stir again, top with the shredded Parm, and put back in for the last 10 minutes without the tin foil.
